Default Thai Tasteastions!

I am a big lover of Thai food! Since working in Australia and being able to tour around asia I fell in love with the cooking styles of Thai and Balinese which are very close!

Here is one of my favourite soups

Tom yum Gai (which uses chicken)

normally Tom Yum is made with Prawns however im not a huge seafood lover so i make this recipe which is chicken.

400 grams (about 1lb) boneless chicken meat diced
3 cups chicken stock
100 grams (3.5 oz) straw mushrooms, halved 6 cherry tomatoes
1 fresh lemon grass stem cut into short lengths
2-3 kaffir lime leaves, torn
3 tbsp Thai fish sauce
4 tbsp fresh lime juice
1/2 tsp sugar
5-6 hot fresh Thai chilies, just broken with pestle

Place the stock in a pot, add the lemon grass and kaffir lime leavess, and bring to boil over medium heat. Add the chicken meat, mushroom, fish sauce, lime juice, and sugar; cook slowly and uncovered for 10 minutes. Do not stir. Then add the tomatoes and chilies and cook for 5 more minutes. Remove from heat

I have to say that Thai food has "got" me. I haven't cooked Asian (other than my Thai Pasta Salad, which I promise to post) for many years.

However, a couple of years ago, I took a class on Thai curries from the famous Arun Sampanthavivat of Chicago, and I am determined to make all three types of curry that he demonstrated this winter. I especially love the Thai Red Curry.

This is fabulous to serve for a party or take on a picnic. It carries well.

JUDITH DUNBAR HINES' THAI PASTA SALAD
(the best one of its kind I've ever tasted! - JJ)

serves 50

3 ounces chicken per person, poached in soy sauce, water and fresh ginger

Sauce: 5 cloves garlic
1 cup fresh cilantro, chopped
1-inch chunk of fresh ginger

Add: 1/2 cup peanut butter
1/2 cup soy sauce
1/4 cup honey
1/4 cup rice vinegar
1 tablespoon hot oil

Add: 3/8 cup vegetable oil
1/8 cup sesame oil

Toss sauce with 5 or 6 pounds of freshly cooked pasta which has been mixed with:

wood ears/oyster mushrooms
julienned pea pods
shredded carrots
sliced water chestnuts
green onions, julienned
chicken.

Top with chopped fresh cilantro and fresh peanuts.

does anybody have a good recipe for padthai? I absolutely love it when I am at a restaurant, but I want to try to make it on my own

I love Pad Thai as well---my favorite !

At The King & I restaurant here in Connecticut --I just love those little fried wonton ?

Just layers of flavors ....

I can tell you that its fairly time consuming because of all its different parts.

Someone will come along soon---maybe with a simplified version !

I sure can attest to June's JUDITH DUNBAR HINES' THAI PASTA SALAD - I've made it many times over the years and it is always a hit.

Nigella Lawson has a red curry paste meatball recipe in her book, Nigella Express, that we just love.

We belonged to a cooking club years ago where we were lucky enough to have at one dinner a couple just returned from Thailand (Peace Corps) and they spent the day leading us through making the best Thai dinner I have ever tasted - best dinner I think over all ever!! I made the curry and it was the first I knew curry was made, not grown.

JUDITH DUNBAR HINES' THAI PASTA SALAD sounds wonderful. I would love to make it, but don't think I could figure out how to scale it down for a smaller family version. I searched online but haven't found it anywhere else. Do you think it would work if I cut everything in half, and then half again? Norma

The salad really doesn't rely on precise measurements - I've made a smaller amount just for family use and it's still great. Just eyeball the amounts. It keeps also, so if you like leftovers, don't cut it down too much.
