Any good sausage recipes?

I have had a partial bag in my fridge for about a year. Just used some last week, and they are fine.

Thanks ArrrTea. Paddy those look great. What I made yesterday reminded me of why I didn't make any after the few I tried about 40 years ago. They all turned out really dry but now I'll try some cured sausage which should be a different kind of sausage all together.
