Default What to do with a pound of hamburger

If all you had thawed for dinner was a pound of hamburger, what would you make?

i would probably make a small meatloaf because i would have all of the other ingredients on hand.
my second choice would be salisbury steaks with fried onions and gravy.

Meatloaf pizza..................... mix meat just like making a meatloaf, then spread thinly in ovenproof dish. Add pizza toppings that you like, bake in the oven, serve with a salad.

this is good. I use a just-add-water cornbread mix for the topping instead of doing the cornbread part of this recipe. I usually have most of this stuff on hand anyway and there is no problem substituting or leaving some stuff out.

Corn Bread Tamale Pie
*
Cooking spray or oil for greasing pan
1 lb. ground beef
1 medium onion finely chopped
1 cup rinsed and drained canned black beans
1 cup corn, drained, canned, or frozen
1 cup tomato sauce
1 cup beef or chicken broth
1/2 cup diced bell pepper
1 tablespoon chili powder
1/2 teaspoon ground cumin
1 1/2 teaspoons of salt, or more to taste
1/4 teaspoon of black ground pepper, or more to taste

3/4 cup cornmeal
1 tablespoon flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1 egg
1/3 cup milk
1 tablespoon vegetable oil
*
1.*** Preheat the over to 425.
2.*** Grease a 3-quart high-sided casserole dish with cooking spray.
3.*** In a large skillet sauté the beef and onion over medium-high heat until the meat is brown and the onion translucent, about 10 minutes.
4.*** Then add the beans, corn, tomato sauce, broth, bell pepper, chili powder, cumin, 1 teaspoon salt and 1/4 teaspoon black pepper.
5.*** Simmer for 15 minutes.
6.*** Set aside.
7.*** In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, and 1/2 teaspoon of salt.
8.*** In a small bowl whisk together the egg, milk and oil until combined.
9.*** Spread the meat mixture into the casserole dish and cover with the corn bread topping.* The topping may disappear into the meat mixture but will rise during baking and form a layer of corn bread.*
10.********************** Bake until the corn bread is brown, 20-25 minutes.* Serves 6.

Maggie, I keep jumbo shells on hand and I would stuff them, cover with tomato sauce and cheese and bake them.

I ended up making meatloaf. I didn't want to stop at the store, and didn't have everything on hand for some of the other delicious sounding ideas.

My recipe calls for two pounds of hamburger, but I only had 1 1/2 pounds. So I skimped a little on the other ingredients but should have cut back just a little more on the breadcrumbs. But it was good. It is getting cold here in Minnesota, so comfort food was good. We had meatloaf, mashed potatoes and gravy, and creamed corn that I made from my garden. Yummy.

I'd make my kids favorite when they were growing up - Corn Surprise!!

CORN SURPRISE
a Chef’s Journey

4 slices bacon
1 pound ground beef
1 onion, chopped
1/2 bell pepper, chopped
8 ounces long pasta
1 can cream style corn
1 can tomato soup
3/4 cup cheddar cheese, grated
3/4 cup swiss cheese, grated
3 cloves garlic, minced
1/2 cup mushrooms, sliced
2 -3 shakes tabasco sauce

Fry bacon until crisp; remove from skillet, cool and crumble.
Pour out any collect bacon fat, but don't clean skillet.
Add the ground beef, onion and bell pepper and cook until the beef is no longer pink.

Break the long pasta in half and cook according to package directions; drain and pour into a large mixing bowl.
Add to the pasta, the corn, soup, all but 1/3 cup of each of the cheeses, garlic and sliced mushrooms; mix together.
Pour into a buttered or sprayed baking dish and top with remaining cheese.

Bake in a 350 oven for 35-45 minutes until bubbly.

"A favorite stir together casserole. This makes a large casserole, but it freezes very well and heats nicely in the oven; or put in two dishes and freeze one for later."

Funny you should ask. Tonight I'm serving "Salisbury steak" to a group of neighbors and recipe follows - scaled for 4 servings:

Beef-Salisbury Steak

Amount Measure Ingredient -- Preparation Method

1 pound ground beef, lean
1/4 cup parsley -- minced
2 tablespoons scallions -- minced
1/2 teaspoon black pepper
2 tablespoons flour
1 tablespoon oil
2 cups onion -- sliced
1 teaspoon sugar
1 tablespoon garlic -- minced
1 tablespoon tomato paste
2 cups low sodium beef broth
1/4 cup red wine
1/2 teaspoon thyme -- dried leaves
2 cups mushrooms -- sliced

combine hamburg, parsley, scallion and pepper. Divide into 1/4 lb patties and dredge with flour

Heat oil over med/high heat and brown patties about 3 minutes each side or until browned and remove from pan

Add onions and sugar and saute 5 minutes. Stir in garlic and tomato paste and saute additional minute.

Sprinkle onions with 1 tablespoon flour and cook 1 minute

Stir in broth, wine, thyme and add mushrooms, adjust and simmer for about 10 minutes. Taste and adjust seasoning.

Return patties to pan, warm in sauce and serve topped with veggie mixture.

I have made these before. They are good. Here is the recipe and a little history.

Traditional Maid-rites from Marshalltown Iowa were served with only yellow mustard, pickle and onion. Ketchup was taken off the counters because the "hobo's" would take the ketchup to make tomato soup back when the restraunt first started. (A history lesson, who knew) Here's the copycat version of maid-rites.

MAID-RITE HAMBURGERS 4 servings

1 lb ground beef or ground chuck (at least 15% fat)
1 cup water
1/4 cup beef broth
1/4 teaspoon salt
4 plain hamburger buns

yellow mustard

minced onions

dill pickle slices

1. Brown beef, use potato masher to help get beef into small pieces.
2. Drain excess fat as soon as pink is gone.
3. Add 1 cup water and 1/4 cup beef broth.
4. Simmer the meat uncovered for 1 hour or until liquid is gone. Stirring every 10 minutes or so.
5. When liquid is gone put meat on bun, top with mustard, onion and pickle.
6. Enjoy.
