i would probably make a small meatloaf because i would have all of the other ingredients on hand.
my second choice would be salisbury steaks with fried onions and gravy.
Meatloaf pizza..................... mix meat just like making a meatloaf, then spread thinly in ovenproof dish. Add pizza toppings that you like, bake in the oven, serve with a salad.

this is good. I use a just-add-water cornbread mix for the topping instead of doing the cornbread part of this recipe. I usually have most of this stuff on hand anyway and there is no problem substituting or leaving some stuff out.
Corn Bread Tamale Pie

Cooking spray or oil for greasing pan
1 lb. ground beef
1 medium onion finely chopped
1 cup rinsed and drained canned black beans
1 cup corn, drained, canned, or frozen
1 cup tomato sauce
1 cup beef or chicken broth
1/2 cup diced bell pepper
1 tablespoon chili powder
1/2 teaspoon ground cumin
1 1/2 teaspoons of salt, or more to taste
1/4 teaspoon of black ground pepper, or more to taste
3/4 cup cornmeal
1 tablespoon flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1 egg
1/3 cup milk
1 tablespoon vegetable oil

1.*** Preheat the over to 425.
2.*** Grease a 3-quart high-sided casserole dish with cooking spray.
3.*** In a large skillet sauté the beef and onion over medium-high heat until the meat is brown and the onion translucent, about 10 minutes.
4.*** Then add the beans, corn, tomato sauce, broth, bell pepper, chili powder, cumin, 1 teaspoon salt and 1/4 teaspoon black pepper.
5.*** Simmer for 15 minutes.
6.*** Set aside.
7.*** In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, and 1/2 teaspoon of salt.
8.*** In a small bowl whisk together the egg, milk and oil until combined.

I ended up making meatloaf. I didn't want to stop at the store, and didn't have everything on hand for some of the other delicious sounding ideas.
My recipe calls for two pounds of hamburger, but I only had 1 1/2 pounds. So I skimped a little on the other ingredients but should have cut back just a little more on the breadcrumbs. But it was good. It is getting cold here in Minnesota, so comfort food was good. We had meatloaf, mashed potatoes and gravy, and creamed corn that I made from my garden. Yummy.
I'd make my kids favorite when they were growing up - Corn Surprise!!
CORN SURPRISE
a Chef’s Journey
4 slices bacon
1 pound ground beef
1 onion, chopped
1/2 bell pepper, chopped
8 ounces long pasta
1 can cream style corn
1 can tomato soup
3/4 cup cheddar cheese, grated
3/4 cup swiss cheese, grated
3 cloves garlic, minced
1/2 cup mushrooms, sliced
2 -3 shakes tabasco sauce
Fry bacon until crisp; remove from skillet, cool and crumble.
Pour out any collect bacon fat, but don't clean skillet.
Add the ground beef, onion and bell pepper and cook until the beef is no longer pink.
Break the long pasta in half and cook according to package directions; drain and pour into a large mixing bowl.
Add to the pasta, the corn, soup, all but 1/3 cup of each of the cheeses, garlic and sliced mushrooms; mix together.
Pour into a buttered or sprayed baking dish and top with remaining cheese.
Bake in a 350 oven for 35-45 minutes until bubbly.

I have made these before. They are good. Here is the recipe and a little history.
Traditional Maid-rites from Marshalltown Iowa were served with only yellow mustard, pickle and onion. Ketchup was taken off the counters because the "hobo's" would take the ketchup to make tomato soup back when the restraunt first started. (A history lesson, who knew) Here's the copycat version of maid-rites.
MAID-RITE HAMBURGERS 4 servings
1 lb ground beef or ground chuck (at least 15% fat)
1 cup water
1/4 cup beef broth
1/4 teaspoon salt
4 plain hamburger buns
yellow mustard
minced onions
dill pickle slices
1. Brown beef, use potato masher to help get beef into small pieces.
2. Drain excess fat as soon as pink is gone.
3. Add 1 cup water and 1/4 cup beef broth.
4. Simmer the meat uncovered for 1 hour or until liquid is gone. Stirring every 10 minutes or so.
5. When liquid is gone put meat on bun, top with mustard, onion and pickle.
6. Enjoy.
